Plant-Based Philly Plum and Chia Pudding

Preheat the oven to 190 °C. Halve the plums and sprinkle them with the caster sugar. Roast for about 20 minutes, or until soft. Let the plums cool completely in their juices, keeping them at room temperature.

In a bowl, mix the lemon juice and Philadelphia until smooth. Stir in the chia seeds, icing sugar, vanilla extract, and oat milk, blending until well combined.

Divide the mixture evenly among 4 serving glasses. Sprinkle the cocoa nibs over the top of each portion.

Chill the glasses in the refrigerator for at least 4 hours, or ideally overnight, to set.

Once chilled, top each serving with the cooled plums and their juices. Serve and enjoy!
